I hope everyone had a wonderful Easter! This year my daughter was able to run around and participate in activities which made this the best Easter so far!
The Easter festivities started Friday night. The family and I made some super yummy Easter treats! I usually don't bake, so this was my first rodeo when it came to baking the treats. And I must say... I didn't do too bad! We made delicious bunny and egg shaped brownies using NOW Foods Living NOW Gluten-Free Brownie Mix. They turned out better than I had expected! I tried decorating them, but got extremely frustrated with the icing, so I threw in the towel with the decorating idea. I can't swear and promise you all that I will get better with the baking, but I am going to keep trying. After all, practice makes perfect, right?
I tried making bunny and egg shaped chocolate chip cookies, but that was a disaster, HA! -__- I needed to adjust baking times and the thickness of the cookie dough in the cookie molds... ugh! Frustration left and right, but it was Easter weekend, so I didn't let it put me in a bad mood. Regardless, the cookies came out pretty good, and dare I say they were downright delicious...even if they were a little thick. The brownies were amazingly awesome! I will definitely be getting more of the Living NOW brownie mix when I am in the mood to make brownies and to better my baking skills. I love that both of the mixes are gluten free and even though I don't make it a point to avoid items with gluten in it, I do make it a point to make things as healthy as possible and these are a great alternative to all of the others you see on the shelf with tons of calories, fat and sugar.
Saturday, we did an Easter themed 5K in Chicago, which I will have a recap for later this weekend. I PR'ed by shaving 3 minutes off of my 5K time and I ran the entire thing!!! Whoa! I'm still shocked! Harlie Jade wasn't too fond of the Easter Bunny this year - the inflatable or the other two versions of bunnies roaming around.
Easter Sunday was a good day. The weather was warm and partly sunny before it switched to cold and rainy. Luckily we got all of the festivities out of the way before it rained, but we couldn't beat the temperature drop.
We were also able to get the annual family egg hunt in before the rain came. My family works hard to put this together at my parents house every year, and I think it is such a wonderful tradition. Harlie Jade got to experience it for the first time this year.
After the festivities, all I wanted to do was kick back and relax with a cheat meal for the rest of the evening. I got pizza, bread sticks and wings from my favorite pizza place. After my meal, I spent my time getting caught up on my favorite shows, while enjoying some new essential oils. The "Cheer Up Buttercup" and "Grapefruit" oils are heaven in a bottle!
